A dinner recipe to try, busy cooking…
- 150ml olive oil
- 8 pork sausages
- 4 tbsp chopped fresh rosemary
- 2 cloves garlic, cut in quarters
- 1 tsp finely chopped dried chilli
- 4 carrots, peeled, finely chopped
- 4 celery sticks, finely chopped
- 2 x 400g tinned borlotti beans, drained, rinsed
- 2 x 400g tinned cannellini beans, drained, rinsed
- Salt to taste
- 400ml boiling water
- 20 cherry tomatoes, halved
For garlic bread:
- Crusty bread
- Extra virgin olive oil
- 2 cloves garlic

Heat olive oil until hot. Shallow fry sausages, rosemary, garlic, chilli

Add carrots, celery

Add borlotti, cannellini beans

Season with salt

Add boiling water, cover, leave to simmer for 20 minutes

Remove lid, remove sausages, cut in 3 pieces

Place sausages back in casserole with cherry tomatoes

Cook on low heat for 10 minutes

Slice bread, brush with extra virgin olive oil

Place on a hot griddle till both sides are crusty

Rub garlic over warm bread

Serve garlic bread hot with casserole
