Beauty & the beet…

Beetroots are low in calories, great source of nutrients, fiber, folatevitamin C. Contain nitratespigments that help lower blood pressure, improve athletic performance. Delicious, versatile fit with a healthy, balanced diet.

Beet Smoothie:

Ingredients:

  • 1 cup coconut water
  • 1 tsp. beetroot powder or cubes of fresh beetroot
  • Handful of fresh berries
  • 3-5 dates
  • 2 tbs shredded coconut
  • ½ tsp. vanilla extract
  • Ice cubes

Method:

  1. Add all ingredients to a blender.
  2. Turn blender on medium till frozen drink has a smooth texture

Beets and Berries Oats:

Ingredients:

  • 1 tsp beetroot powder
  • 1/4 cup fresh cranberries
  • 1 cup rolled oats
  • 1 1/2 cups almond or soy milk
  • 1 tsp. coconut oil
  • 1/4 tsp. cinnamon
  • maple syrup to taste

Method:

  1. Puree cranberries
  2. Mix all of ingredients besides syrup in an air-tight jar
  3. Refrigerate mixture overnight or for 8 hours.
  4. Pour mixture into a bowl
  5. Sweeten with desired amount of maple syrup

Honey Roasted Beet:

Ingredients:

  • 4 medium carrots, diced
  • 1 tbsp balsamic vinegar
  • 2 tbsp clear honey
  • 1 tbsp olive oil
  • 4 pre-cooked beetroots (not in vinegar), quartered
  • 25g pumpkin seeds
  • handful fresh herbs, parsley or basil to serve

Method:

  1. Heat oven to 180C
  2. In a bowl toss carrots, vinegar, honey and olive oil
  3. Spread on a baking tray, roast for 30 mins
  4. Remove 5 mins before end of time, add beetroot to tray, return to oven.
  5. Once cooked, remove from oven, leave to cool a little
  6. Toss with pumpkin seeds and herbs to serve
