Beet Smoothie:
Ingredients:
- 1 cup coconut water
- 1 tsp. beetroot powder or cubes of fresh beetroot
- Handful of fresh berries
- 3-5 dates
- 2 tbs shredded coconut
- ½ tsp. vanilla extract
- Ice cubes
Method:
- Add all ingredients to a blender.
- Turn blender on medium till frozen drink has a smooth texture
Beets and Berries Oats:
Ingredients:
- 1 tsp beetroot powder
- 1/4 cup fresh cranberries
- 1 cup rolled oats
- 1 1/2 cups almond or soy milk
- 1 tsp. coconut oil
- 1/4 tsp. cinnamon
- maple syrup to taste
Method:
- Puree cranberries
- Mix all of ingredients besides syrup in an air-tight jar
- Refrigerate mixture overnight or for 8 hours.
- Pour mixture into a bowl
- Sweeten with desired amount of maple syrup
Honey Roasted Beet:
Ingredients:
- 4 medium carrots, diced
- 1 tbsp balsamic vinegar
- 2 tbsp clear honey
- 1 tbsp olive oil
- 4 pre-cooked beetroots (not in vinegar), quartered
- 25g pumpkin seeds
- handful fresh herbs, parsley or basil to serve
Method:
- Heat oven to 180C
- In a bowl toss carrots, vinegar, honey and olive oil
- Spread on a baking tray, roast for 30 mins
- Remove 5 mins before end of time, add beetroot to tray, return to oven.
- Once cooked, remove from oven, leave to cool a little
- Toss with pumpkin seeds and herbs to serve
