Thandai, a favourite drink in spring, Holi – festival of colours…

Nuts like blanched almonds, chopped cashews, pistachios along with spices – cinnamon powder, fennel seeds, cardamom, peppercorns, poppy seeds are ground with milk to make a paste. Added to a pan of milk with saffron, sugar.

A chilled glass of Thandai to be relished, topped with saffron strands, nuts, rose petals.
