Campfire casserole…

A nourishing, warm low-calorie casserole with a little kick. Served with our choice of steamed vegetables. A healthy winter warmer.

  • 2 onions, roughly chopped
  • 2 red peppers – deseeded, roughly chopped
  • 4 garlic cloves, finely chopped
  • 4 celery sticks, thickly sliced
  • 2 carrots – peeled, thickly sliced
  • 300g peeled butternut squash, cut in cubes
  • 500ml chicken stock
  • 400g chopped tomatoes
  • 4 tbsp tomato purée
  • 400g tin cannellini beans
  • 400g red kidney beans in chilli sauce
  • 1½ tbsp Cajun seasoning
  • 1 tbsp sweet smoked paprika
  • 1 tbsp Worcestershire sauce
  • 1 tsp Tabasco sauce
  • 600g/ lean, thick gammon steaks, cut into large pieces
  • Salt, freshly ground black pepper
  1. Preheat oven to 200C

  2. Spray a wide, oven-proof casserole dish with low calorie cooking spray

  3. Add onion, peppers

  4. Stir fry for 5 minutes over medium heat to soften

  5. Add remaining ingredients, bring to boil

  6. Cover, bake for 1½ hours till gammon is tender, sauce thickened

  7. Season, serve with steamed vegetables
