- 2 onions, roughly chopped
- 2 red peppers – deseeded, roughly chopped
- 4 garlic cloves, finely chopped
- 4 celery sticks, thickly sliced
- 2 carrots – peeled, thickly sliced
- 300g peeled butternut squash, cut in cubes
- 500ml chicken stock
- 400g chopped tomatoes
- 4 tbsp tomato purée
- 400g tin cannellini beans
- 400g red kidney beans in chilli sauce
- 1½ tbsp Cajun seasoning
- 1 tbsp sweet smoked paprika
- 1 tbsp Worcestershire sauce
- 1 tsp Tabasco sauce
- 600g/ lean, thick gammon steaks, cut into large pieces
- Salt, freshly ground black pepper

Preheat oven to 200C

Spray a wide, oven-proof casserole dish with low calorie cooking spray

Add onion, peppers

Stir fry for 5 minutes over medium heat to soften

Add remaining ingredients, bring to boil

Cover, bake for 1½ hours till gammon is tender, sauce thickened

Season, serve with steamed vegetables
