Chorizo, chicken bake…

Low calorie roast chicken bake. Chorizo adds a spicy flavour. Only 600 calories!

Ingredients:

  • 2 onions, quartered
  • 2 red peppers, seeds removed, quartered
  • 1 yellow pepper, seeds removed, quartered
  • 8 large tomatoes on the vine
  • 80g chorizo, sliced
  • 400g tin cannellini beans, drained, rinsed
  • 4 garlic cloves, bashed
  • 2 sprigs fresh rosemary
  • 8 chicken thighs, skin-on, bone-in
  • 2 tbsp olive oil
  • 1 tsp sea salt flakes
  • freshly ground black pepper
  1. Pre-heat oven to 200C

  2. Put onions, peppers, tomatoes, chorizo, beans, garlic, rosemary in roasting tin

  3. Top with chicken, drizzle with oil

  4. Scatter with salt, pinch of pepper

  5. Roast for 1 hour until chicken is cooked, skin is golden brown

  6. Leave chicken to rest for 10 minutes

  7. Serve with vegetables
