Shakshuka bake…

Cooking breakfast for kids:

Ingredients:

  • 2 red peppers, thinly sliced
  • 2 yellow peppers, thinly sliced
  • 1 red onion, thickly sliced
  • 1 aubergine, sliced 
  • 800g vine tomatoes, quartered
  • 1 red chilli, roughly chopped
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 2 tbsp olive oil
  • 4 free-range eggs
  • Sea salt, freshly ground black pepper
  • Handful fresh coriander, chopped
  • Flatbread or pitta bread, warmed

Method:

  1. Preheat oven to 220C

  2. Place peppers, onion, aubergine, tomatoes, chilli, spices, oil in roasting tin

  3. Season with salt, pepper

  4. Stir till vegetables are thoroughly coated in oil, spices.

  5. Roast for 25 minutes

  6. Reduce oven temperature to 180C

  7. Place roasted tomatoes into a bowl

  8. Squash till consistency of a thick sauce

  9. Stir back into vegetable tin

  10. Make 4 indentations in vegetable mixture

  11. Crack an egg into each, scatter little salt, pepper

  12. Bake for 10 minutes till eggs are cooked 

  13. Scatter coriander

  14. Serve with warm breads
