Hunter’s chicken – an Italian classic tomato stew.
Ingredients:
- 75g plain flour
- 1 kg chicken, 8 pieces
- 2 tbsp vegetable oil
- 2 brown onions, sliced
- 2 garlic cloves, chopped
- 30g tomato purée
- 800g tomatoes, chopped
- 2 sprigs fresh rosemary
- 1 bay leaf
- 100ml white wine
- 150ml chicken stock
- 1 tbsp red wine vinegar
- Handful fresh parsley leaves
- Salt, freshly ground black pepper
Method:

Season flour with salt, freshly ground black pepper

Dredge chicken pieces

Heat oil in casserole over a medium heat

Fry chicken for 3 minutes on each side, until brown

Remove, set aside

In same casserole, fry onion, garlic for 10 minutes over low heat till softened

Add tomato purée, cook for 5 minutes

Add tomatoes, rosemary, bay leaf, wine, stock, vinegar

Bring to boil

Reduce heat, simmer for 20 minutes

Return chicken pieces to casserole, cover with lid

Simmer over low heat for 40 minutes till chicken is tender

To serve, sprinkle with parsley leaves

Serve with roasted, mashed or boiled potatoes
