Hunter’s chicken…

Hunter’s chicken – an Italian classic tomato stew.

Ingredients:

  • 75g plain flour
  • 1 kg chicken, 8 pieces
  • 2 tbsp vegetable oil
  • 2 brown onions, sliced
  • 2 garlic cloves, chopped
  • 30g tomato purée
  • 800g tomatoes, chopped
  • 2 sprigs fresh rosemary
  • 1 bay leaf
  • 100ml white wine
  • 150ml chicken stock
  • 1 tbsp red wine vinegar
  • Handful fresh parsley leaves
  • Salt, freshly ground black pepper

Method:

  1. Season flour with salt, freshly ground black pepper

  2. Dredge chicken pieces

  3. Heat oil in casserole over a medium heat

  4. Fry chicken for 3 minutes on each side, until brown

  5. Remove, set aside

  6. In same casserole, fry onion, garlic for 10 minutes over low heat till softened

  7. Add tomato purée, cook for 5 minutes

  8. Add tomatoes, rosemary, bay leaf, wine, stock, vinegar

  9. Bring to boil

  10. Reduce heat, simmer for 20 minutes

  11. Return chicken pieces to casserole, cover with lid

  12. Simmer over low heat for 40 minutes till chicken is tender

  13. To serve, sprinkle with parsley leaves

  14. Serve with roasted, mashed or boiled potatoes
