Reminiscing blueberry picking during last US trip. Plump, juicy, sweet. Vibrant colours from red to dark purple-black, blueberries are one of nature’s finest treasures.
Delicious, delectable jams, jellies, pies, waffles, pancakes, yoghurt’s, syrup’s, chutney’s, in handful’s on it’s own. Low in fat, packed with vitamin C, anti-oxidants. A favourite.
Blueberry Jam:
- 4 cups fresh blueberries
- 1 cup white sugar
- 1 tablespoon fresh lemon juice
- 1 pinch ground cinnamon
Method:
- Mix blueberries, sugar, lemon juice, cinnamon in a saucepan
- Cook, stirring constantly over medium heat until thickened, 30 minutes
Mixed berries are a great substitute, as well.
