
An easy, delicious, healthy, classy chicken recipe, won’t fail to impress. Serve with steamed new potatoes, vegetables for a bigger meal. My dinner last night!
Preparation time – 30 minutes.
Ingredients:
- 2 skinless boneless chicken breasts
- 60g/2¼oz garlic, herb soft cream cheese
- 4 slices Serrano or Parma ham
- 2 sprigs fresh thyme
- 1 tbsp finely chopped flatleaf parsley
- 1 tbsp fresh breadcrumbs
- ½ tbsp finely grated parmesan
- 1 tsp finely grated lemon zest
- 1 tbsp olive oil
- 10 cherry tomatoes
- 40g/1½oz baby leaf spinach
- salt and freshly ground black pepper
Method:

Preheat oven to 190C/170C Fan/Gas 5.

Turn chicken breasts over so smooth side is on chopping board. Use small sharp knife to cut a pocket (length of breast).

Open pocket, neatly spread cheese into pocket. Fold chicken back to seal cheese inside.

Turn chicken breasts back smooth side up, lay a thyme sprig on top.

Carefully wrap each chicken breast in two overlapping slices of ham, place chicken in a small roasting tin.

In a bowl mix parsley, breadcrumbs, parmesan lemon zest, season with rock salt, ground black pepper.

Scatter over chicken breasts, drizzle with olive oil, cook for 10 minutes.

Arrange cherry tomatoes around chicken, cook for another 10 minutes until chicken is cooked.

Add spinach to pan, mix into pan juices, return to oven for 5 minutes to wilt leaves.
