Mediterranean lamb chops…

A perfect supper recipe – simple, flavourful lamb chops served with healthy vegetables, feta cheese. A delicious low calorie dish to cook. 

Method:

  1. Preheat oven to 180C / 355F / Gas 4

  2. Using pestle, mortar blend mint, rosemary, garlic

  3. Add 1 tbsp of olive oil

  4. Smear herb mix over lamb chops

  5. Place aubergine, courgette, peppers on baking sheet

  6. Drizzle with olive oil, place lamb chops on top

  7. Place into oven to roast for 20-25 mins

  8. Top chops with feta cheese, cherry tomatoes

  9. Return to oven for 10 mins till cheese is brown, lamb chops cooked

  10. Serve chops with roasted vegetables, mixed leaf salad
