Preheat oven to 180C / 355F / Gas 4

Using pestle, mortar blend mint, rosemary, garlic

Add 1 tbsp of olive oil

Smear herb mix over lamb chops

Place aubergine, courgette, peppers on baking sheet

Drizzle with olive oil, place lamb chops on top

Place into oven to roast for 20-25 mins

Top chops with feta cheese, cherry tomatoes

Return to oven for 10 mins till cheese is brown, lamb chops cooked

Serve chops with roasted vegetables, mixed leaf salad
